A simple vanilla chia pudding to play with
When I first started my blog, I was also training for my first half marathon. That pretty much meant I could eat whatever I wanted whenever I wanted, because I burned most of it off with all the running. The half marathon was in January and it went great! But the problem is, as much as I said I was going to continue to run on a regular basis, once race day was done, my life immediately took over and I just didn't find the time to fit it in.
I still do short work outs, but I definitely don't burn as much as I used to, so whether I like it or not, I have to think about what I eat! But of course, I am a foodie who refuses to compromise on taste.
Every time I open my instagram page lately, I'm very likely to see a picture of chia pudding on my feed, and it always looks OH SO good (By the way, have we met on instagram yet? If not, you can find me here: instagram.com/veggiebuzz)! So I figured I would give this super food a try. I looked around at all the creative recipes out there, some with chocolate, some with coconut milk, and some just plain and simple vanilla. In the interest of keeping things healthy, I decided to prepare a simple vanilla based pudding with almond milk, a little bit of agave syrup for sweetness, and vanilla for flavour.
Since it's mango season, I topped it off with some chopped alphonso mango and threw in some pumpkin seeds for added crunch and colour. The result: a delicious bowl of goodness that is my answer to the annoying "where do to get your protein?" questions I keep getting!
Here's a simple vanilla chia pudding recipe, for you to play with as you please! Don't be afraid to get creative! Throw some cacao powder into the almond milk, or use coconut milk instead! Top with some berries, citrus zest, cacao nibs, seeds or even bee pollen! Do whatever you please, because its always more fun when you add your own creative twist!

- Serves: 2
Ingredients:
- 3 tbsp chia seeds
- 1 cup almond milk
- 1 tsp vanilla essence
- 1 tbsp agave syrup (or use honey instead)
Method:
- Add the vanilla essence and agave syrup to the almond milk and stir thoroughly.
- Add the chia seeds, stir, and let it sit for a couple of minutes.
- Stir again and wait another 5-10 mins.
- Give it one final stir and soak overnight in the fridge.
- The next morning, stir it, divide into 2 smaller bowls, and add the toppings of your choice!
It's as simple as that! Enjoy your refined-sugar free, dairy free, raw vegan, gluten free and guilt free breakfast!
