Eggplants (or aubergines) are certainly one of the Middle East's favourite foods, a key ingredient to a vast gastronomic culture. Not only are they a delicious and hearty vegetable, eggplants are incredibly good for you. They contain significant amounts of chlorogenic acid (one of the most powerful free radicals found in plants) which promotes anti-cancer effects, prevents blood clots and strengthens capillaries. Eggplants are also low in calories (just 35 calories in one cup), contain no fat and are loaded with minerals like calcium, potassium, phosphorous and magnesium. They're also a great source of fiber which protects against colon cancer and keeps you fuller for longer!

1. Mutabbal
