Watermelon & Halloumi Salad

Ingredients:

  • 8 cups seedless watermelon, cut into 1-inch chunks
  • 1/4 cup choppedĀ mint leaves
  • 3 tbsp lemon juice
  • 250 g halloumi cheese, cut into bit-sized cubes
  • Pinch of salt

Method:

  • Combine the watermelon and halloumi in a large mixing bowl.
  • Add mint leaves and mix together.
  • Add in the lemon juice and salt and mix thoroughly.
  • Serve cold.
