Don't Be Cheesy! Make This Creamy Vegan Pasta Instead!

Ingredients:

  • 1 ripe avocado
  • 1 cup fresh basil
  • 1/3 cup pine nuts
  • 2 cloves garlic
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • Handful of spinach
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 cups uncooked pasta (eggless)

Method:

  • Fill a large saucepan with about 4 cups of water and bring to a boil over high heat.
  • Add in the pasta and cook for about 10 minutes (or as long as suggested by the package directions).
  • Remove from heat, drain the pasta and set aside.
  • Combine the rest of the ingredients in a food processor and blend until creamy.
  • Divide the pasta onto plates.
  • Top each plate of pasta with about 1/4 cup of the prepared pesto.
  • Mix it all together and enjoy!
