Lentil Beetroot Burger
- Total Time: 3 hrs
- Cook Time: 10 mins
- Serves: 4
Ingredients:
- 1 cup chopped red beets
- 1/2 onion, chopped
- 2 prunes, pitted and chopped
- 1 cup uncooked lentils
- 2 cloves of garlic, minced
- 1/2 tbsp apple cider vinegar
- 1/2 tbsp coriander, chopped
- 1 tbsp parsley, chopped
- 1/2 tbsp mint, chopped
- 2 tbsp rice flour
- 1 flax egg (1tbsp ground flax seed + 3 tbsp water bloomed for 10 minutes)
- Juice of half a lemon
- Salt and pepper to taste
- Olive oil for frying
Method:
- Soak lentils for 2 hours, then bring them to a boil until tender (approximately 25 minutes).
- Boil the beets in ½ cup of water until tender.
- Prepare the flax egg.
- In a pan, sauté garlic and onions until translucent and set aside.
- In a large bowl, mix the lentils, beetroot, coriander, mint, parsley, prunes, rice flour, salt and pepper. Mix well.
- Pour in the lemon juice, flax egg, sautéed onion & garlic and apple cider. Mix all together until well incorporated
- Divide the mixture into even portions and shape each one into a burger patty.
- Place the burgers on a heated pan or skillet and cook for about 1-2 minutes per side.
- Assemble the burger with your favorite fillings and enjoy!
