Lentil Beetroot Burger

Lentil Beetroot Burger

  • Total Time: 3 hrs
  • Cook Time: 10 mins
  • Serves: 4

Ingredients:

  • 1 cup chopped red beets
  • 1/2 onion, chopped
  • 2 prunes, pitted and chopped
  • 1 cup uncooked lentils
  • 2 cloves of garlic, minced
  • 1/2 tbsp apple cider vinegar
  • 1/2 tbsp coriander, chopped
  • 1 tbsp parsley, chopped
  • 1/2 tbsp mint, chopped
  • 2 tbsp rice flour
  • 1 flax egg (1tbsp ground flax seed + 3 tbsp water bloomed for 10 minutes)
  • Juice of half a lemon
  • Salt and pepper to taste
  • Olive oil for frying

Method:

  • Soak lentils for 2 hours, then bring them to a boil until tender (approximately 25 minutes).
  • Boil the beets in ½ cup of water until tender.
  • Prepare the flax egg.
  • In a pan, sauté garlic and onions until translucent and set aside.
  • In a large bowl, mix the lentils, beetroot, coriander, mint, parsley, prunes, rice flour, salt and pepper. Mix well.
  • Pour in the lemon juice, flax egg, sautéed onion & garlic and apple cider. Mix all together until well incorporated
  • Divide the mixture into even portions and shape each one into a burger patty.
  • Place the burgers on a heated pan or skillet and cook for about 1-2 minutes per side.
  • Assemble the burger with your favorite fillings and enjoy!
