Fenugreek & Peanut Salad

Ingredients:

  • Fenugreek leaves, about one big handful
  • 1 tbs honey
  • Juice of 1/2 a lime
  • 2 tbs roasted peanuts

Method:

  • Wash the fenugreek leaves thoroughly and pat dry. Place in a medium-sized bowl.
  • In a small bowl, combine the lemon juice and the honey to make the dressing.
  • Drizzle the dressing over the fenugreek.
  • Sprinkle the peanuts on top.
  • Mix all the ingredients together.
  • Serve!
